Surprisingly good, this is a great recipe to use up all of the zucchini your co-workers keep trying to give away at the office. My wife absolutely loved it, and didn't think it needed a lot of help. However, I stick to my guns and say that when I make it again, I'll be adding garlic powder & cayenne to give it a little more "oomph" as it's a little bland for me.

I should note that I did 'lightly peel' the zucchini as I thought that might help make it less 'squash-like' and more like a potato-y breakfast casserole. It may have helped a bit.
